How to Make the Perfect Pan-Seared Surf Perch with Lemon Herb Butter

Ingredients
- 1 lb fresh surf perch fillets
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- 1 lemon (zest + juice)
- Optional: pinch of red pepper flakes for a slight kick
Instructions
- Prep the Fish
- Pat the surf perch fillets dry with a paper towel.
- Lightly season both sides with salt and pepper.
- Heat the Pan
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Sear the Surf Perch
- Place the fillets skin-side down (if skin is on) in the skillet.
- Cook 3–4 minutes per side, depending on thickness, until the fish is opaque and flakes easily with a fork.
- Make the Lemon Herb Butter
- Reduce heat to medium.
- Push the fish to the side of the pan, add butter and garlic to the empty space.
- Sauté garlic for about 30 seconds until fragrant.
- Stir in parsley, thyme, lemon zest, and a squeeze of lemon juice. Add red pepper flakes if using.
- Coat and Serve
- Spoon the butter sauce over the surf perch fillets.
- Serve immediately with extra lemon wedges on the side.
